The knobs

are used to adjust the grinding level of the coffee beans. The bigger knob

is used for an initial
(basic) adjustment and the smaller knob

is used to adjust a precise setting. Adjustments made using those 2 knobs
will change the taste of the coffee.
The adjustments can be made only when the grinder is operating.
